Have you seen the SPAM commercial with SPAM Tacos? Apparently, this is a thing. My husband, Mike is the kind of guy who will eat anything I put on the table. He has never, ever complained about a meal that I’ve made. Not even the weird science experiments I throw together when the fridge is bare and I’m feeling “creative.” I’m genuinely grateful—especially since, let’s be honest, something questionable hits the table at least once a week.
But when it comes to meal planning? Mike is… not exactly helpful. I ask him every single week for ideas. Every. Week. And every time, I get a vague shrug or a half-hearted “whatever is easy.”—as though that solves all the world’s dinner dilemmas.
So when he actually suggested a specific meal—SPAM Tacos, no less—I nearly fell over. Of course I said yes. I wasn’t about to let this unicorn moment pass me by.

You’ll see that it’s not much of a recipe so we zhuzhed it up with what I had on hand which included some corn from the freezer and mango salsa. My little one kept her taco plain and ate the corn on the side. I loaded mine up, of course.

Admittedly, I’d never had SPAM before this. I had always considered it a kind of retro curiosity. But it was so affordable—just $2.50 a can at Walmart—and surprisingly tasty. Two cans were enough to feed the four of us comfortably.
Verdict? A total hit. Budget-friendly, ridiculously easy, and shockingly good. Everyone enjoyed this meal, and I’ll certainly make it again–when I need a break.
